Below are links to recipes for tasty seafood dishes that can be easily prepared and served for a special dinner meal.

LOBSTER BISQUE
6 Tbsp. Olive Oil
3 onions sliced                                  16 whole peppercorns
3 large celery stalk                            1 ½ cup Brandy
3 carrots sliced                                  1 ½ cup Sherry
3 garlic heads, cut in half crosswise     12 c  bottled clam juice
3 tomatoes, sliced                              ¾ cup tomato paste
6 Tbsp. chopped fresh tarragon           1 ½ cup whipping cream
(or 4 Tbsp. dry)                                 6 tsp. cornstarch
6 Tbsp. chopped fresh thyme              3 Tbsp. water
(or 4 Tbsp. dry)
6 Bay leaves                                     1 ½ lbs lobster meat

Heat the olive oil in a large pot over high heat. (Add Lobster shells and bodies if available and sauté until shells begin to brown). Add onion and next 8 ingredients. Mix in brandy and sherry. Boil until liquid had evaporated and add calm juice and 2 cups water with 6 Tbsp. of lobster paste (if shells and bodies are not available). Simmer 1 hour.

Strain soup through a sieve. Whisk tomato paste into soup. Simmer until soup is reduced to 3 cups. Add cream to soup  and simmer for 5 minites Dissolve cornstarch into water. Add to soup and boil until slightly thickened. Mix lobster meat into soup.

SEAFOOD CASSEROLE

1 lb. Shrimp
1 cup white wine
1 tbsp. Parsley
1 tbsp. Butter
1 tsp. Salt
1 medium onion sliced
1 lb. Bay scallops
3 tbsp. Butter
3 tbsp. Flour
1 cup  ½ and ½
½ shredded swiss cheese
2 tsp. Lemon juice 
½ tsp. Pepper
1 lb. Crabmeat
4 oz. Mushrooms
1 cup breadcrumbs
½ cup parmesan  
 
Melt 3 Tbsp.of butter in a saucepan  on medium low. Add 3 Tbsp. of flour and gradually whisk in the 1/2 and 1/2 to make a white sauce. Stir in wine, lemon juice, salt, pepper and Swiss cheese. Set aside. Lightly saute the onion in 1 Tbsp. butter. Add shrimp, bay scallops, and mushrooms and saute for another 5 minutes. Mix the sauce in with the seafood mixture and pour into a casserole dish. Mix breadcrumbs with 1 Tbsp. melted butter. Sprinkle buttered breadcrumbs and parmesan cheese on top. Bake at 400 for 20-25 minutes or until bubbly.
